For Pani (Spiced Water):
─ Sugar- 2 tblspn
─ Salt- to taste
─ Tamarind – 2 tblspn
─ Dry mint powder- 1 tblspn
─ Coriander leaves – 1 cup
─ Ginger(chopped) – 1 tblspn
─ Red chilli powder, to taste
─ Black salt – 1 tsp
─ Roasted cumin powder-1 tblspn
─ Potato- big size
─ Dry Onion-1 cup
─ Baking soda-1/4- tblspn
─ Ground turmeric-1/2 tblspn
─ Red chilli powder
─ Chaat masala-2 tblspn
─ Salt –to taste
─ Fresh chopped cilantro-1/4 cup
─ Lemon juice-3 tblspn
─ Black pepper- to taste
─ Tamarind concentrate -1 tblspn
─ Corn or vegetable oil, for frying
─ Sooji – 1 cup
─ Whole-wheat flour- 1/4 cup
─ Add lemon juice, tamarind, cumin and mint powder, sugar, sprinkle chili powder and masala into the 4 cup water and put it into the refrigerator.
For the Puri:
─ Souji, salt, baking soda and wheat flour mix properly and make a stiff dough, cover it and put it for 30 min .(use warm water)
─ Now, roll it and cut a small circle. (use cutter for cutting)
─ Deep fry until it becomes golden brown (make sure the oil is hot and while frying press the in the centre)
─ Boil potato and mashed it.
─ Add yellow onion add salt to taste and put it aside.
For Peas (Matar)
─ Soak the peas in water overnight, and then drain.
─ Put the soak peas in a pot with the turmeric and baking soda and add enough water to just cover the peas for overnight.
─ Cook until the peas are soft, add salt, black pepper and red chilli powder.
─ Make a fine paste of coriander, Black Salt, Tamarind, Ginger(chopped) mint leaves and Coriander leaves green chilli’s (grind it)
─ Add a small quantity of Gur and put it in the refrigerator.
─ By tapping slowly make a hole on puri and put little-smashed potato
─ Now put green paste and peas
─ Putting it on the plate, in the center the bowl of Pani (spice water).And enjoy it
